Chef Hugo Banana Liqueur Lobster with Wild Rice

Ingredients:

2lb Lobster meat cut into large pieces
2tbsp butter
2tbsp olive oil
1/4 cup chopped celery
1tsp chopped fresh garlic
1/4 cup chopped shallots
2 tomatoes (no skin and chopped)
3tbsp chopped cooking onions
1/4 cup chopped red & green pepper
2tbsp 151 Proof Rum
1tbsp Banana Liqueur
1tbsp Roasted Chili Peppers (Middle East variety)

Chef Hugo Banana Liqueur Lobster with Wild Rice

Method:

  1. In a large pan over moderately high heat melt the butter and add the olive oil. Add the lobster meat, celery, garlic, shallots, tomatoes, onions, red and green pepper and roasted chili. Sauté quickly for 5 to 7 minutes. Add the rum and banana liqueur.
  2. Plate up with wild rice. A St Maarten specialty. Enjoy.
