Ingredients:
2lb Scallops
3tbsp butter
4tbsp Olive oil
Salt & pepper to taste
1/4 cup white wine
1/4 Cup chopped shallots
2tbsp Chopped garlic
In a medium pan over moderately high heat, melt the butter and add the olive oil. Brown the scallops on both sides. When cooked set the scallops to one side. Deglaze the pan with the white wine and add the shallots and garlic. Cook quickly but not too long. |

Mussel Sauce
Ingredients:
5lbs Mussels
Method:
In a large pot bring 1 cup of water to a boil. Add the mussels and steam them for 5 to 7 minutes. Remove from heat and allow to cool. Discard any unopened ones. Take them out of the shell and purée them in a blender.
Cooked Pasta for 4 (penne)
Ingredients:
Plate up by starting with the Mussel sauce. Ladle it into the bottom of the plate. Put the pasta on the sauce. Place the scallops on the pasta and spoon on the sauce that was in the scallop pan. Have fun!
