Rack of Lamb (3 rib sections per person) |

Ingredients:
Rosemary Salt
3tbsp Fresh rosemary finely chopped
1tbsp Coarse sea salt
(Combine ingredients and place in shallow pan in oven for 1 hour at 250F)
Creamy Goat Cheese Sauce:
1/2 cup goat cheese
1/4 cream
Heat in shallow frying pan until melted. Salt & Pepper to taste.
Method:
Cut the rack of lamb but not all the way through. Generously rub with the rosemary salt inside and out. Place in shallow pan with clarified butter. 400F oven for 25 - 35 minutes. Donít overcook it. Remove from oven and slice individual sections. Spoon goat cheese sauce over the lamb.
Serve with roasted potatoes and fresh steamed vegetables.
