Ingredients:
2 cups pears chopped
1 cup sugar
1 cup sparkling ice wine
Method: Once you have your pears all chopped and ready put in the sugar and just enough of the sparkling ice wine to cover the pears. Put this on the stove and let it simmer for little while until the pears are soft and tender and then we are going to purée it. Place in the refrigerator to cool. |

Cocoa rounds
Ingredients:
2cups icing sugar
1cup flour
1 cup cocoa powder
1cup ground almond
1 cup egg whites
1cup melted butter (hot)
Methos: Mix all the solid ingredients together. Add the egg whites and mix thoroughly. Add the butter while it is still hot and mix well. Place in shallow pan and place in 350F oven for 20 minutes until baked. Let cool and cut into 4" rounds or squares.
Ingredients:
4 Pears
1 cup ice wine
Vanilla ice cream
Icing sugar and shaved chocolate
Mint leaves for decoration
Methos: Poach 4 pears in ice wine until soft. Do not over cook. Allow the pears to cool. Core the pears from the bottom to create a cavity. Fill the cavity with vanilla ice cream. Place pears in freezer for 4 hours.
To Plate:
First we're going to start with the chilled pear puree which has been in the refrigerator until it's beautifully chilled. Spoon into a bowl to coat the bottom of the plate. Place the cocoa round in the center. Add a scoop of vanilla ice cream on top. We take one of our beautiful little frozen pears and put it right on the top. Sprinkle icing sugar over the top and add shaved chocolate for decoration. Garnish with mint leaves.
