Ingredients:
Lemon ice cream as desired
1 1/2 cups sugar
1 1/2 cups of butter
1 cup of flour
1 cup Cocoa
3 whole eggs
1 cup ground macadamia nuts |

Method:
Cream the butter and sugar together in a mixing bowl. Mix for approximately 8 minutes. Set mixer to low speed and then add the eggs. When well blended remove the mixing bowl from the mixer. Mix the flour and cocoa together and add the cocoa/flour mixture. Fold in the nuts. Then take the batter and pipe it into prepared molds. Fill the molds about two-thirds full and place them into a preheated 350 degrees Fahrenheit oven. It takes about 23 minutes.
Chocolate Sauce
Ingredients:
1 cup of fresh cream
6oz shaved unsweetened choclate
Method:
Bring the cream to a boil in a sauce pan. The chocolate is placed into a bowl and when the cream has reached a boil pour it into the chocolate. The chocolate will melt and you have a rich simple chocolate sauce.
Fruit Compote
Ingredients:
2cups fresh fruit (strawberries, peaches, blueberries, gooseberries, raspberries)
Method:
Heat the fruit in a fry pan on medium heat. Do not overcook. Set to one side.
Plating up:
Place the cooled chocolate cake in the centre of the plate. Spoon the warm berries around the chocolate cake. Spoon chocolate sauce on top of the chocolate cake. Spoon lemon ice cream on the chocolate sauce. There you have it - chocolate macadamia cake with lemon ice cream. Bon appétite.
