BBQ Lobster Jerk

Ingredients:

1 lb lobster
3 tbsp jerk seasoning
If you wish to make your own here is a recipe:
1/3 cup virgin olive oil
3 tbsp white vinegar
2 tbsp lime juice
1 tbsp sugar
1/4 cup minced green onions
1/2 tsp salt
2 garlic cloves, minced
1 scotch bonnet or jalapeno pepper, seeded, minced
1 tsp dried thyme leaves
3/4 tsp ground allspice
1/2 tsp ground cinnamon
1/2 tsp cayenne pepper
5 to 6 Pimento Leaves (optional)

BBQ Lobster Jerk

Methods:

  1. First loosen the lobster meat a little bit to get underneath. Take the jerk seasoning and spread it underneath the shell. Spread the jerk seasoning on the top as well.
  2. Marinate for about an hour or more if you wish.
  3. Place the lobster right on top of the pimento leaves and pour a little bit of the marinade on the top.
  4. Serve on a plate with cool lettuce, tomato and cucumber. Enjoy
