Ahi Tuna with Papaya Mango Salsa

Ingredients:

1lb sushi quality tuna
3tbsp Jerk seasoning
2tbsp herb butter (butter, garlic, chives & scallions)
1/2tsp sea salt (optional)
2tbsp wasabi mayonnaise
2 oz light mayonnaise
1/2 oz wasabi

Mango salsa:
1 large papaya
2 mangos
1 red onion
1 tbsp lime juice
1stp Cayenne pepper

Ahi Tuna with Papaya Mango Salsa

Methods:

  1. Marinate the tuna with some jerk seasoning for about two hours. Put some herb butter into a really hot black steel pan.
  2. You'll have the pan on very high heat before you put the tuna fillet in there because you want to sear it. Make sure it stays rare inside.
  3. Once you get a nice golden color on one side, flip it over. Cut it on the bias to reveal a nice seared tuna.
  4. Decorate the plate with some wasabi mayonnaise. Add papaya mango to cool the wasabi mayonnaise. Enjoy
