Turtle Steaks from The Cracked Conch

(Turtle Steaks for this recipe came from The Caymen Island Turtle Farm)

Ingredients:

1lb Turtle steaks (chicken breast is a good substitute)
2 tbsp margarine
1 tsp chopped garlic
Salt and pepper to taste
1/4 cup chopped mushrooms
1/4 cup chopped onion
3 oz Coconut rum
2 tsp chili pepper sauce
A dash Tabasco sauce
1/4 cup cream

Turtle Steaks from The Cracked Conch

Methods:

  1. In a heavy skillet melt the margarine and lightly brown the Turtle meat. Remove the turtle meat and add a little more margarine. Add salt, pepper and the garlic.
  2. Sauté slightly for two minutes on a medium heat. Add the mushrooms and onion. Sauté for another 2 minutes. Then add the coconut rum and the chili pepper sauce and Tabasco.
  3. Put the turtle steaks back into this mixture along with a little more salt. Simmer for 4 more minutes.
  4. Add the cream a minute before serving. At The Cracked Conch the turtle steaks are served with some rice and beans, sliced tomato and pumpkin mash. Lemon on top for garnish. Enjoy.
