Scrambled Eggs With Smoked Salmon & Lobster

Ingredients (per serving):

2 thinly sliced pieces of smoked salmon
2 tbsp of butter
2 eggs
2 tsp of minced chives
1 tsp of oka cheese (grated)
1 tbsp of chopped lobster meat (cooked)
1 slice of whole grain bread (toasted)
1/4 cup of hollandaise sauce
1 tsp of salmon caviar
1 piece of dill
1 piece of chive

Scrambled Eggs With Smoked Salmon & Lobster

Methods:

  1. Mix eggs with 1 teaspoon of mixed chives, 1 teaspoons of oka cheese and add 1 tablespoon of cooked lobster meat. Add just a touch of water to the mixture.
  2. In a small fry pan, melt 2 tablespoons of butter on medium/high heat. Add the egg mixture and stir quickly. The eggs should cook quite quickly. Remove from heat once they are cooked.
  3. Mix 1 teaspoon of minced chives with 1/4 cup of hollandaise sauce.

 

To Plate:

Use a round mold (about 4 inches in diameter, 1 1/2 inches high) and line the inside edges and bottom with 2 thinly sliced pieces of smoked salmon. Fill to the top of the mold with the scrambled eggs. Cut 1 piece of toasted whole grain bread into a circle matching the size of the mold and place on top of the eggs. Pour the hollandaise mixture into the center of the plate. Invert the mold so the salmon is on top and place on the sauce. Remove the mold carefully. Put 1 teaspoon of salmon caviar on the top of the smoked salmon. Garnish with a piece of dill and a chive.
