Ingredients:
1 – 2 duck breasts, skin removed
1 cup hoisin sauce
1 Tbsp sugar
1 Tbsp soy sauce
1 tsp Chinese five spice
1 tsp minced garlic
1 tsp dry sherry
1 tsp chili garlic oil
green onion and celery, julienned
pea shoots for garnish
Combine hoisin sauce, sugar, soy sauce, five spice, garlic, sherry and chili garlic oil. Place duck breast in the mixture and marinate for at least 4 hours. Remove from marinade and wipe off excess liquid. Heat a skillet to medium and sear both sides of breast approximately 2 minutes per side. Finish cooking in a 325 F oven until cooked medium rare. Allow breast to rest for a few minutes before slicing thinly across the grain.
Place a portion of julienned green onion and celery crosswise in the centre of each slice.
Roll the slices up and place one roll, seam side down, on individual Chinese style spoons. Top each portion with a drizzle of hoisin sauce and garnish with pea shoots.
