Chef Al Hynes prepares Vodka Pomodoro Sauce

Ingredients:

4 large vine ripe tomatoes
2 teaspoons chopped garlic
4 tablespoons extra virgin olive oil
1 cup marinara sauce
1/2 cup chopped fresh basil
1/2 cup burgundy wine
1/2 cup heavy cream
1/2 cup vodka
Salt & Pepper to taste
2 tablespoons grated cheese



Methods:

  1. Peel, seed and chop the tomatoes.
  2. Add the olive oil and garlic.
  3. Saute for 4 minutes until hot, add wine, marinara sauce and fresh basil.
  4. Cook for 5 minutes more and add salt and pepper.
  5. In a skillet, heat pasta in 2 tablespoons of olive oil until hot.
  6. Add 1/2 cup vodka, burn off the alcohol.
  7. Then add Pomodoro sauce and 1/2 cup of heavy cream.
  8. Heat until boiling then serve with grated cheese.
