Ingredients:
4 large vine ripe tomatoes
2 teaspoons chopped garlic
4 tablespoons extra virgin olive oil
1 cup marinara sauce
1/2 cup chopped fresh basil
1/2 cup burgundy wine
1/2 cup heavy cream
1/2 cup vodka
Salt & Pepper to taste
2 tablespoons grated cheese
Methods:
- Peel, seed and chop the tomatoes.
- Add the olive oil and garlic.
- Saute for 4 minutes until hot, add wine, marinara sauce and fresh basil.
- Cook for 5 minutes more and add salt and pepper.
- In a skillet, heat pasta in 2 tablespoons of olive oil until hot.
- Add 1/2 cup vodka, burn off the alcohol.
- Then add Pomodoro sauce and 1/2 cup of heavy cream.
- Heat until boiling then serve with grated cheese.
