Yield: 6 servings
Ingredients:
1/2 cantaloupe melon, skinned, de-seeded and cut into 1" dice
1/2 Crenshaw melon, skinned, de-seeded and cut into 1"dice
Juice of 3 oranges
1/8 tsp. nutmeg
1/2 tsp. cinnamon
1 oz. Brandy
6 oz. crème fraiche (recipe follows)
Chopped parsley for garnish
Methods:
- Place first 6 ingredients in a blender, puree until smooth. Chill.
- Pour into chilled soup bowls, garnish with crème fraiche and parsley.
- Serve immediately.
