Executive Chef Roberto prepares Mediterranean Bluefish

Ingredients:

Fresh Bluefish (whole)
Fresh parsley (chopped)
Garlic cloves (peeled)
Hot pepper
Salt
Cherry tomatoes (halved)
Extra virgin olive oil
Potatoes (peeled and sliced)
Dry white wine

Mediterranean Bluefish

Methods:

  1. Place fish (already cleaned) in pan; season with parsley, garlic cloves, hot pepper, and salt. Add fresh ripe tomatoes to pan.
  2. Pour olive oil over entire dish.
  3. Place sliced potatoes around fish; coat potatoes with salt and olive oil.
  4. Fill bottom of pan with white wine.
  5. Bake in pre-heated oven (375°F) for 25 - 30 minutes or until fish is flaky and potatoes are done.
