Baked Fish Ligurian Style

Ingredients:

1 Fresh Caught Fish
Extra Virgin Olive Oil
2 Tomatoes
2 Potatoes
Salt and fresh ground pepper
Oregano
Fresh parsley (ground)
Fresh garlic
White wine
Fresh basil leaves
Ligurian olives
Pine nuts
Porcine mushrooms ­ sliced

Baked Fish Ligurian Style

Methods:

  1. Place whole fish (already cleaned) in baking pan in olive oil.
  2. Cut 1 tomato in a decorative style; cut potatoes in segments; place vegetables around fish.
  3. Add salt, pepper and oregano to entire pan; salt & pepper inside of fish as well.
  4. In a separate bowl, combine ground fresh parsley, garlic and white wine to make about 3 cups; pour over entire pan of fish and vegetables.
  5. Add second tomato, chopped, to pan; add fresh basil leaves and whole ripe Ligurian olives.
  6. Sprinkle pine nuts across pan.
  7. Place mushrooms around fish.
  8. Cover entire pan with aluminium foil; bake in oven (375°F) for 20 min or until fish is flaky and vegetables are cooked.
  9. Divide vegetables, sauce and flesh of fish onto two plates and serve hot.
