Executive Chef Sevoula Giannikos prepares Fried Fish in a Garlic Sauce

Ingredients:

Small fish (or small fish fillets) - 6 to 12
Salt
Flour
Olive oil for deep frying

Garlic Sauce (make 2 cups):
Fresh garlic
Salt
Olive oil
Vinegar
Fresh lemon juice

Methods:

  1. Clean fish thoroughly (if using fresh fish).
  2. Sprinkle with salt, then dip in flour.
  3. Deep-fry in olive oil.
  4. Keep aside 1 cup of the olive oil used to fry fish.

Garlic Sauce:

  1. Combine garlic, salt, olive oil, vinegar and lemon juice in a blender or food processor; blend until thick but fairly smooth.
  2. In a bowl, spoon out garlic sauce and add left-over cup of warm olive oil; mix together slowly until blended (this will thin out garlic sauce).
  3. Smother already-fried fish entirely with garlic sauce; allow fish to soak up garlic sauce for 2-3 hours, then serve.
