Ingredients:

Vine leaves
Long-grain white rice (uncooked)
Onions (finely sliced)
Mint
Dill
Parsley
Zucchini
Olive oil
Lemon juice
Pinch of salt

Dolmades

Methods:

  1. Boil the vine leaves until soft.
  2. Combine rice, onions, mint, dill, parsley, zucchini, olive oil and lemon juice.
  3. Fill each leaf with mixture and roll, tucking in ends.
  4. Place rolled leaves in bottom of large pot; add enough boiling water to cover them.
  5. Add one cup of olive oil and a touch of salt.
  6. Cook for 1 hour over medium-low heat.
  7. Serve hot with 1 or 2 spoonfuls of natural, strained yogurt or Tzatziki.
