Executive Chef Antonio Cosentino prepares Grilled Lemon Leaves Stuffed with Shrimp

Ingredients:

For Each Individual Serving -
2-3 Good size shrimp
2 Lemon leaves
Salt
Fresh Parsley - chopped
1 clove Garlic ­ finely chopped
Olive Oil

Methods:

  1. Peel Shrimp.
  2. Combine salt, parsley, garlic and olive oil in a small bowl. Add in shrimp and mix well.
  3. "Stuff" lemon leaves with shrimp mixture: shrimp mixture is place on one lemon leaf, and then covered with the other.
  4. Best cooked on a Barbeque or gas grill by placing stuffed lemon leaves directly on grill until shrimp are cooked. Do not overcook shrimp. If cooking on an electric range, use a sauce pan on medium high heat until shrimp are done.
  5. Garnish with ripe tomatoes.
