Ingredients:

Aged Goat Cheese
Multigrain Brioches
Peppery Lettuces such as baby water cress, mustard, kale
Red wine gastric (reduction of red wine and honey or sugar)

Executive Chef Chris Jones prepares Old Goat Cheese Stuffed in a Multigrain Brioche

Methods:

  1. Cut brioche in half. Set lid aside.
  2. Stuff bottom of brioche with goat cheese.
  3. Place in a pan in a preheated oven (300°F) for 4-5 minutes to soften the cheese.
  4. Remove from oven.
  5. Place peppery lettuce on top of cheese, and replace brioche lid.
  6. Plate brioche and dress with a dribble of the red wine gastric around the brioche.
  7. Enjoy.
