Aged Goat Cheese
Multigrain Brioches
Peppery Lettuces such as baby water cress, mustard, kale
Red wine gastric (reduction of red wine and honey or sugar)
Methods:
Cut brioche in half. Set lid aside.
Stuff bottom of brioche with goat cheese.
Place in a pan in a preheated oven (300°F) for 4-5 minutes to soften the cheese.
Remove from oven.
Place peppery lettuce on top of cheese, and replace brioche lid.
Plate brioche and dress with a dribble of the red wine gastric around the brioche.
