Perched high on the top of Malahat sits the Aerie Inn. This Relais et Chateaux Inn is atop a Norwegian-like Fjord and commands the most impressive views on the Island. This Mediterranean styled resort sits perched on the mountainside and clings like a limpet to the cliffs. The main dining room has uninterrupted views of the lakes and mountains across the island and provides the most perfect setting for the diner seeking something quite extraordinary. Manager Markus Griesser takes us on a tour of his Inn and Executive Chef Chris Jones prepares two special recipes, which form part of an eight course-tasting menu with wine pairings from the famous Napa Valley winery, Joseph Phelps. At the dinner, Managing Director Tom Shelton introduces each wine as Markus outlines the dinner courses. Markus also toasts Taste of Life by "sabering" a bottle of fine French Champagne by taking off the cork with a gold saber just as Napoleon used to do on horseback after winning battle.
