The food of the region, Canadian Rocky Mountain Cuisine is shown at its most innovative with Executive Chef Alistair Barnes, of Canadian Rocky Mountain resorts and Gerrard Smith executive chef of The Emerald lake Lodge. This lodge is one of the three properties in this exciting company's group. Alistair and Gerrard prepare a stunning salmon and scallop terrine with nori and follow it with a Ribeye of Buffalo with a Redcurrant Reduction, Wild Mushroom Timbale and Smoked Bacon Rösti.
