Ingredients:
1/2 cup cucumber, sliced
1 tsp thai chili paste
1/2 cup soy sauce
1 tbsp fresh minced ginger
1/2 tsp sesame oil
4 scallions
1/4 cup rice vinegar
1/2 bunch cilantro, shredded
1/4 cup water
1/4 cup pickled ginger, shredded
2 tbsp toasted sesame seeds |

Garnish:
1 tbsp wasabi
2 tbsp toasted sesame seeds
1 cup warm sushi rice
1/4 cup pickled ginger
1 pound yellowfin tuna, cut in julienne strips (best to use #1 sushi grade tuna)
Methods:
- Combine all the ingredients. Let set for one hour.
- Marinate tuna for 15 minutes
- Slightly drain tuna and mold with sushi rice
- Roll in sesame seeds to "crust" the rice
- Garnish with pickled ginger, and wasabi.
