Ingredients:

2 king prawns
2 slices of ginger
Shelled walnuts
Chinese wolfberries


Seasoning and Sauce:

1/2 tsp salt
3 tsp fine sugar
1/2 tsp light soya sauce
1 tsp cooking wine
2 tsp tomato ketchup
4 tbsp high quality soup stock


Methods:

  1. Heat pan with 1 tbsp of oil. Add ginger. Put in the prawns to try until colour changes. Pour out the excess oil in the pan.
  2. Add seasoning (wine, salt, soya sauce, sugar, tomato ketchup) and soup stock to make sauce. Stir well and bring to boil. Cover pan and simmer the prawns over low heat until the prawns are moist and well coated with the sauce (about 5 minutes).
  3. Remove prawns and arrange on a serving dish with walnuts and chinese wolfberries. Simmer the remaining sauce until sauce thickens and stir well.
  4. Pour sauce over the cooked prawns. Serve.
